D.O.C. since 1993, here Grotta del Sole buys grapes exclusively from ‘alberate' of Asprinio grown together with the poplar trees up to 20m in height. We believe that in this area it is possible to find the last evidence of this cultivation system dating back to the Etruscans, also used in the past in other Italian regions such as Tuscany, Umbria and Lazio.

Each of the processing operations is carried out manually by the farmers on custom-made ladders simply leaned against the walls of the ‘alberate'. The harvest is very picturesque, especially the operation where the ladders are moved in order to pick the grapes. The harvest is carried out starting the third week of September.
